BILADI – DE KEBABOORLOG IS REAL

Afijn, laatst at ik dus het beste broodje kebab van Hoofddorp bij die nieuwe tent Döner Bite.
Dat was een kek broodje met wat extra’s als cocktailsaus en een degelijk omhulsel waar al dat lekkers in verpakt zat.
Mijn enige en blijvende kritiek was dat de sambal niet erg heet is. De beste man gaf me een bakje mee en tja, het is gewoon niet echt heet en als peper afficionado wil ik gewoon een beetje zweten na het eten van een broodje.


Niet alleen bij kebab trouwens, ik heb een kast vol hete sauzen die ik eigenlijk bij alles gebruik.
In de ochtend eet ik 98% habanero saus op m’n ontbijt, ’s avonds eet ik Thais met birds eye chilies en daarna, als ik knetter ben, eet ik hummus met knalhete amerikaanse chilisaus erin die kreeg van de bassist van m’n favoriete band. Dit is geeneens een grap, maar dat lijkt het wel als ik dat zo lees. Dit was mijn dag qua eten gister.
Vandaag zal ik me inhouden en at ik alleen die 98% saus vanmorgen op twee geroosterde boterhammen met kaas en salami, maar straks eten we een bak sla ofzo, want morgen ga ik iets doen buiten en bbq ik pittige burgers van de Highflight met extra jalapeno’s en bbq saus. Niet superheet, maar zeker niet voor mietjes. Oh, ik realiseer me dat die salade Mexicaans wordt dus daar zal toch wel iets gaande zijn qua Scovilles. Wat is tenslotte een Mexicaanse salade zonder jalapeno’s? INDERDAAD!
Ala, dit was alleen om te duiden dat ik veel hete saus eet, dat er vaak een hele koude wind waait door mijn boxershort en dat m’n reet regelmatig aanvoelt alsof hij in de fik staat. Ik ben die gast.
Goed, dat afgerond, over naar waar het om ging!

Je zal net zien…dat als je denkt dat je iets hebt gevonden dat goed is, dat er vrijwel meteen een tegenreactie komt en je weer voor de volgende keuze komt te staan.
Zo ook als het aankomt op wat het beste broodje kebab is in Hoofddorp.
Helemaal content met Döner bite, liep ik door het dorp waar ik een Turkse peper moest halen want ik wilde ZHUG maken.
WEER IETS HEETS!
Superlekker dat dus, zhug. Ik adviseer iedereen het eens te maken.
Yemenitische hete saus met kardemom erin. Pfffiiiiiiew! De kardemomsmaak met hitte is er een die je zelden proeft. Net een soort chimmichurri, maar dan met een kardemom bom erin.
Dus ik liep via de LIDL naar Biladi, zo’n turkse supermarkt aan de kruisweg.
Voordat ik uberhaupt binnen was, zag ik dat ze een hele balie hebben neergezet waar ze broodjes verkopen en toen….viel m’n oog op iets bijzonders.
YAPRAK.
Ik zag het staan en dacht: NOH!
Yaprak???!
Een jaar terug zocht ik uit waar deze gelaagde velletjes döner te halen viel en dat was best wel een gedoetje. In Zaandam zit een tent die het heeft, in Bronx en Lommer, in Rotterdam, maar allemaal gedoetjes met reizen en weetikveelwat. Ik gooide het op de lange baan.
Maar wat? Nu ineens in Hoofddorp? Yaprak?
De twee rollen in Biladi zijn duidelijk; een kip rol en een yaprak kalfsrol.
Nou ben ik geen expert, maar de yaprak rol zag er top uit. Leek wel eigenhandig gemaakt, maar dat kan natuurlijk ook uit een fabriek komen. Als iemand weet hoe dit gaat, laat het me weten voor ik prijzen ga uitdelen.
Oh, internet vertelt me dat je deze rollen ook gewoon kan bestellen online. Nou ja, tot zover het prijzenfestijn.
Ik vergat instant de peper die ik moest halen en verlegde de focus op de kebab.
Bestelling gedaan, beetje vlees van de rol gekregen en naar binnen gewerkt en ja, het was duidelijk yaprak. Het is een beetje zoals het vlees van Imren in Berlijn, dat in melk wordt gemarineerd ’s nachts.
Een hint van kruidnagel geloof ik. Geen idee wat er verder in zit, maar de smaak is 100% uniek en lijkt in geen velden of wegen op ‘gewone’ kebab.
Godsamme, waarom?
Net de kont lopen kussen van die andere tent….moet je hiermee dealen!
De selectie aan groenvoer is master hier trouwens. Jalapeno’s, gemengde sla met wat sumak en dan die yaprak. Ik kan niet anders dan toegeven dat dit dermate speciaal is, dat deze de toppositie overneemt.

Dusseh, Döner Bite; ik zou kijken naar wat Mustafa of Ruyam doen in Berlijn en daar wat van stelen (de plaat onder de rol met aardappel en paprika bv, gekruimelde feta met peterselie of kruidensaus zoals die moffen maken.
Het hele concept gemusekebap zou gewoon moeten aanslaan in Nederland, tenzij je er 15 euro voor vraagt natuurlijk.
En zet meteen een potje neer met chiliflakes of nog heter chilipoeder zoals ze dat deden bij Kottiwood, waar je kan kiezen of je ‘rambo’ wil gaan met hete flakes. Of waar ze toen zo’n pan met gesmolten kaas hadden staan die over de döners ging voor de ‘chilicheese kebap’.
Godver, meteen trek.
De kebaboorlog is begonnen!
Nieuwe spot Hoofddorp centje; Biladi Supermarkt met hun yaprak döner. Rij meteen langs Döner Bite en vergelijk ze! Wie had dat gedacht?? Goeie broodjes in fucking Hoofddorp!
