Hier in San Francisco wordt je met een overvloed aan eten dood gesmeten. Je struikelt over de Mexicaanse taqueria’s, Thaise toko’s, Vietnamese toko’s, Chinezen zat, pizzeria’s, hamburgertenten en restaurants uit allerlei streken. Als je trek hebt in Mongoolse schapenzweetsoep dan vind je die vast. Bhutanese yeti steak? Kom maar op.
Hoe veelzijdig het aanbod aan eten dan ook mag zijn, in San Francisco is er, tussen die steile heuvels die in de polder zouden doorgaan voor heuse ski pistes, geen bitterbal in zicht, geen Hemaworst te vinden, en geen broodje döner kebab aan de horizon. First world problems noemen ze dat hier. Af en toe wil m’n wel vaker bezopen kop simpelweg een broodje döner kebab snacken. Shawarma (niet te verwarren met de zionistische shoarma variant) is er zat, en daar kom ik nog wel eens op terug. Maar De Turkse variant, onze geliefde kebab blijkt zoek in Baghdad by the bay.
Nou liep ik onlangs door the Tenderloin, een buurt in de binnenstad van S.F. wat
voor de locals een begrip an sich is. Achterbuurt is niet echt een toereikende
beschrijving. The Tenderloin is een wijk die een beetje de post-apocalyptische,
verlopen, charme heeft van Grozny. Met een heel leger aan kleurrijke zombies die er de straten in alle misère bewonen.
Daklozen in allerlei soorten, geuren en kleuren die met behulp van een setje psychologische problemen paren met een spannende verslaving die om zich heen schreeuwen en aan de hemel proberen te krabben. Junks die op de stoep en
klaarlichte dag shotjes leggen. Gasten die al zo lang helemaal naar de klote zijn dat ze al hun tanden en soms ook al hun benen kwijt zijn. Moeilijke dudes die de junks bevoorraad houden en aan hun street cred werken. Verlopen stoephoeren met en zonder lul, die eigenlijk meer in een slechte 80er jaren film thuishoren. En dan nog een heel team aan lui die eruit zien als of ze net van een zombie filmset set zijn verdwaald. Er wordt wel eens gezegd dat je the Tenderloin pas echt hebt meegemaakt als iemand je al schijtend om geld vraagt.
Maar goed, zoals ik zei, onlangs liep ik door the Tenderloin. Niet om crack te scoren, niet om pikken te zuigen, niet om als een idioot tegen de hemel aan te schreeuwen, noch om pontificaal op straat te kakken, maar gewoon omdat ik van punt a naar b moest en dat was gewoon sneller door the Tenderloin.
En met een redelijke pas schizofrene junks en al trippende weirdos ontwijkend, zag ik een goedkoop bord boven een toko hangen die geen loempias of “massages” aanbood, maar “Turkish Shawerma”.
Het klonk wel een beetje onhandig, en raadselachtig. Zouden ze Döner kebab bedoelen? De al wat primitieve marketing deed z’n werk en had m’n aandacht.
Het was middag, en ondanks de wat onsmakelijke omgeving moet een mens toch eten – dus ging ik bij Rotana Shawerma naar binnen.
De primitieve look van het bord verried dat het eigenlijk niet veel beter zou zijn binnenin. Dat was al duidelijk, in dat lege en onbelichte hok. Een rotte tafel achter in een donkere hoek, vergeelde posters van bloempartijen. En zo’n dunne stalen bar die te dicht bij de bespiegelde muur staat – om de tent groter te laten lijken, en voor sommigen de eenzaamheid te benadrukken. Er stonden wat krakkemikkige barkrukjes bij die eigenlijk in de weg stonden als je bestelde. Achter de balie stond de grill, frituur, spit en alle keuken mikmak. Het kebabspit was nogal treurig en ik was even vergeten dat ik in een land van overvloed, obesitas en diabetes was.
De kebabrol had niets in omvang of sappigheid om de kebab enthousiast aan te moedigen. Het had meer weg van een pas opgegraven mammoetkeutel. Droog, bruin, karig en er steenhard uitziend om het spit gevormd.
Als ik ergens in een kebabtent op het Europese vasteland was geweest had ik ze de vinger gegeven, maar dat was ik niet. Ik was duizenden kilometers verwijderd van het laatste broodje döner kebab waarvan ik heb mogen genieten (Dappermarkt, 12 Augustus, 2012). Een broodje kebab zou het zijn. En als internationaal correspondent moet ik zelfs de meest linke, steenharde kebab een waardering geven. Het duurde ook even voordat er ook iemand was die me kebab kon aanbieden.
Een kleine Arabisch ogende man, in een wollen trui, kwam via een achterdeur haastig achter de toonbank. Ik had duidelijk z’n urenlange rookpauze verneukt. Om praatjes te maken vroeg ik nog even waar hij vandaan kwam, wat hem eigenlijk aan het twijfelen bracht en nog al angstig maakte. Je zou maar van het Arabische schiereiland komen en dan vraagt er een of andere vage Yank waar je nou vandaan komt, voor je het weet heb je een verplichte vakantie op Cuba in oranje overalls met nachtenlang countrymuziek die in je oren blèrt. Om hem gerust te stellen zei ik tegen hem in m’n beste en enige Arabisch dat ik uit Nederland kom. Maar dat valt tegenwoordig ook niet zo goed bij de Arabische broeders.
“Cartoon?” vroeg hij peinzend.
Ik liet de koetjes en kalfjes maar zitten en bestelde de Turkish shawerma sandwich, met lamsvlees, die ze in aanbod hadden. Kip was er ook in de aanbieding. Maar ik houd van m’n döner in traditioneel lamsvlees. Sla, en saus erbij?
Doe alles maar, zei ik om hem tevreden te houden. Hij ging aan de slag en hoefde tot m’n verbazing/teleurstelling geen beitel te gebruiken om het vlees van het spit te krijgen.
De zes dollar die ik ervoor neertelde is gemiddeld voor een shawarma, hamburger of sandwich hier in de stad. Dus dat viel wel te overzien, en een spotprijs als dit dan ook daadwerkelijk een zalig broodje döner kebab zou zijn. Dit zou al gauw erg voorbarig, en naïef blijken.
Enkele minuten later had ik dus geen broodje döner kebab in m’n handen, maar gewoon een in folie gewikkelde shawarma wrap zoals gebruikelijk in de Levantijnse streken.
Teleurgesteld dat je geen broodje döner kebab was? Ja zeker, maar honger had ik ook, en dit was werk dat af moest.
Het lavash brood dat het allemaal bij elkaar hield was, verbazingwekkend, niet taai ondanks z’n magnetronvoorbereiding. De hoeveelheid ijsbergsla in de wrap was toereikend, en gepeperd met stukjes tomaat en ook wortel snippers wat ik eigenlijk niet gewend was, maar is weer eens wat anders. Al met al was de rauwkost redelijk knapperig en vers. De saus was nogal verwaterd maar dat bedekte de wat te zoute smaak van de al vermoeide en harde stukjes vlees net genoeg dat ik het hele ding wel achter de kiezen zou krijgen.
Al kneep ik m’n ogen dicht dan zou ik nog aardig wat moeite moeten doen om me in de heuse smaak te wanen van zo’n dappermarkt kebab of zelfs eentje van de döner company enkele minuten voor sluitingstijd.
Tijdens het verwerken van die shawarma wrap kwam de eigenaar van de tent binnen. Het was duidelijk dat hij de eigenaar was want hij blafte in wat verwijtend Arabisch tegen de kleine donkere man in de wollen trui. Maar in mijn oren klinkt Arabisch, net als Hebreeuws en Frans, altijd verwijtend. Voordat die hele shawarma op was maakte ik nog een foto van dat ding.
“Why you make picture?!” Vroeg de iets te zware eigenaar van Rotana Kebab, alsof ik hem z’n Michelinster zou aftroggelen.
“Is oke. Is for people in Holland.” Zei ik in m’n beste allochtonen Amerikaans.
“Ah Cartoon” zuchtte hij.
Hij blafte nog wat tegen de gast achter de balie en was er al vandoor, voordat ik het verschil tussen Nederland en Denemarken kon uitleggen. En zo ook het verschil tussen een broodje Turkse döner kebab en de troep die hij verkocht.
Iets later vertrok ik ook. Enigszins teleurgesteld door de valse belofte van een broodje döner kebab, en ietsjes ongerust toen ik herinnerde hoe spannend m’n laatste voedselvergiftiging was.
Ik geef Rotana maar één schaap van de vijf qua smaak (die was uiteindelijk, oke) maar voornamelijk voor de teleurstelling. De tegenprestatie die de shawarma van Rotana heeft geleverd is dat ik geen voedselvergiftiging heb gescoord, geen diarree en nog leef, wat toch wel een pluspunt waard is. Het goede nieuws is dat sinds ik dit stuk al een maand of langer op m’n bureaublad heb liggen, Rotana Shawerma ondertussen gesloten is.
