Zoals wel vaker in augustus was het ook dit jaar voor mij eens tijd om de zon, stof, strotverrot en aurale bevrediging op te zoeken: Sziget festival te Boedapest, Hongarije. Eén van de zeer aangename bijkomstigheden van het festivallen in Boedapest is de aanwezigheid van Romeinse badhuizen. Om de paar dagen kan je alle festivalmeuk van je af laten weken in baden van diverse temperaturen, Turkse stoombaden en sauna’s. Mocht je je daarna nog steeds niet als een plasje contente was voelen kan je er zelfs nog twee tientjes tegenaan gooien en je laten masseren door een harige Hongaar. Topplan. Ook dit jaar liet ik mij dus stevig onderdompelen in zwavelhoudend water (meurt, maar is wel heel gezond, schijnt). Dit heeft altijd dezelfde consequentie: honger.
Gelukkig begin ik langzaam een beetje de weg te kennen in Boedapest, dus het duurde niet lang voor we ons weer bevonden op de grote straat waar ik vorig jaar voor het eerst kennis mocht maken met de biefstukkebab. Aan de andere kant van dezelfde straat, maar dan een stukje verder richting het station zit Török Étterem (ik heb de naam ook niet bedacht), waar drie man als Tasmaanse duivels aan het werk zijn om iedereen van hun bestelling te voorzien. Wij bestelden onze kebab en alsof de duivel ze op de hielen zat gingen er twee van de drie te werk. De man maakte het product klaar terwijl de vrouw afrekende. De dürüm (ze doen niet aan broodjes in dit gebied) werd tegen de gril van de rol aan gehouden en met enthousiasme werd er biefstukkebab, rode kool, ui en sla op het geheel gelepeld (na ‘everything?’ gevraagd te hebben).
Ook bij de sauzen wordt keurig gevraagd of je spicy/garlic wilt alvorens dit in een ietwat teleurstellende hoeveelheid op het product te deponeren.
Na dit gebeuren zich in een recordtempo voltrok verdwenen de uitbaters weer een beetje in de achtergrond. Eén WC bezoek later (die tent was overigens verassend groot binnen) maakt duidelijk dat de eerdere drukte allemaal schijn is. Binnen staan ze met zijn drieën een beetje tegen de koeling aan te leunen en te roddelen.
Net als aan de andere kant van de straat zijn de eettentjes hier ook voorzien van terrasjes, deze zaak was geen uitzondering. Met de groep namen we plaats.
Terwijl sommigen van ons (ik zal geen namen noemen) zich tevreden stelde met vegetarische Subway broodjes ging het leeuwendeel voor eenzelfde product als ik. De meningen waren gelijk: wederom een zeer smakelijk kebabproduct waar we in Nederland nog wat van kunnen leren. Toch wat minpunten: de saus was te dun en liep dus overal heen waar het niet zou moeten zijn, de sambal had pittiger gekund. Het vlees was minder mals (maar nog steeds smakelijk) dan bij de eerder gerecenseerde Antalya kebab, verder kwam het product op hetzelfde neer. Het personeel had er schijnbaar geen enkel probleem mee dat er ook Subwaybroodjes op hun terras verorberd werden, noch dat wij eigen meegebrachte Arany Aszokjes (Hongaarse Amstel, welteverstaan) gebruikten om de kebab weg te spoelen. Dit zorgde ervoor dat wij er in heuse Nederlandse na-tafel stijl nog een uur gezeten hebben. Heerlijk.
Een paar dagen later toen het festival ten einde was, maar mijn verblijf daar nog niet, ben ik nog enkele kebabzaken tegengekomen. Helaas gebeurde dit op een moment dat ik geen honger had. De vervelende conclusie die ik hieruit trek: ik zal weer terug naar Boedapest moeten. Hè.
