Sommige weekenden beginnen spectaculair, beginnen dan wat brak en traag te worden, hebben nog een paar wanhopige stuiptrekkingen en eindigen dan in een grijze koude maandag waarop je te horen krijgt dat Leslie Nielsen dood is.
Gelukkig maken sommige broodjes kebab deze misère wat draaglijker.
Op vrijdag ben ik Tiel vertrokken om mosselen te eten met wat van het beste volk van Nederland. Uiteraard voornamelijk kebabreporters, en na flink wat bier en heerlijk eten kreeg ik toch het gevoel dat ik mijn deel niet gedaan (ofwel; geschreven) had de laatste weken. De vlam om een nieuwe zaak te recenseren brandde weer heftig.
Op mijn weg terug naar huis in de trein in slaap gevallen, waardoor ik de laatste trein vanuit the middle of nowhere terug moest pakken naar Utrecht, waar ik vervolgens weer op de nachtbus moest gaan zitten wachten. Gelukkig in het gezelschap van een maatje, maar de aankomende sneeuw zorgde toch voor een spontane koppijn waar je u tegen zegt. Ik daag eenieder die van sneeuw houdt uit om vooral in Zwitserland te gaan wonen en mij met rust te laten. De avond begon dus redelijk spectaculair en eindigde als een soort maandag waar ze met een dikke stift ‘vrijdag’ overheen geschreven hadden.
Vervolgens door al deze perikelen op zaterdag alleen maar brak in bed gelegen, waar ik er door een zekere andere kebabreporter ook nog eens op gewezen werd dat de maandag bestaat, en rap onderweg was. Op zaterdag. Waarom verneukt die maandag mijn hele fucking weekend?!
Op zondag voelde ik me weer redelijk mens, en in een laatste poging om de maandag mijn weekend niet te laten overschaduwen op weg gegaan naar Vriendin Dope, een vrouw die ik al vanaf jongs af aan af en toe lastig val met diverse vormen van gezeik en voedsel. Na samen de wonderen van de wereld besproken te hebben werd het al gauw etenstijd en ik mocht besluiten waar we gingen eten. Dat werd de Grillroom Shoarma Aswan, een kebab zaak naast de Dirk van de Broek in Overvecht, vlakbij Vriendin Dope haar huis.
Die kant op gelopen eindigden we eerst in de Andalouse, de zaak naast de Aswan, die vanwege de grote foto’s van shoarma en durum er uit zag alsof ze ook wel kebab verkochten. Dit was niet het geval, en wij werden met een enigszins chagrijnige blik verwezen naar de buren; de Aswan. Hier probeerden wij de ‘afhaal’ deur te openen, maar die bleek gesloten, en we kwamen via de gewone weg de zaak in. Dit is met stip de chiqueste zaak die ik ooit gezien heb. Keurige verdeling met een lange bar waar een vleesrol klaar hangt. Nette tafeltjes, een enkele bezoeker (die, wat mij verteld is, daar ongeveer woont), en een televisie setje die beelden vertoont van een zich aanstellende Shakira.
Wij bestellen twee broodjes kebab en een frietje om mee te nemen en wachten rustig af. De man gooit twee mita’s (mini pita’s) onder de grill, jammer. Vervolgens loopt hij níet naar de vlees rol. Ergens haalt hij erg dik, donkerbruin vlees vandaan wat hij in een koekenpannetje voor ons opbakt. Heel secuur worden alle stukjes vlees met een tangetje omgedraaid en gebakken. Vriendin Dope vraagt; “Is dat kebab?!”, waarop de man met grote trots roept: “Natuurlijk! Dat; *wijst naar de vlees rol*, is shoarma. Wil je liever shoarma?” Waarop hij ook wat reeds gesneden shoarma tevoorschijn haalt. “Nee hoor, wij gaan echt voor de kebab.” “Wat voor saus zou je er bij willen?” “Heeft u saus om mee te nemen?” “Ja, ja, meenemen! Knoflook? Sambal? Mayonaise? (Voor bij de friet natuurlijk).” Op alle vragen roepen wij ja, Vriendin Dope vraagt nog om een extra bakje saus die wij zonder mopperen mee krijgen. “Ook nog wat sla er op?”, roept hij terwijl hij met een tang vol ijsbergsla zwaait. Hij stopt wat van het aparte vlees in de mita, gooit er wat sla bovenop, voegt weer wat vlees toe, en gooit het geheel met aluminiumfolie en al in de oven.
Ondertussen bakt hij de frietjes, en als de friet klaar is komen de broodjes uit de oven. Ondertussen gaat de telefoon een keer, maar in plaats van die op te nemen gaat hij door met het bereiden van ons voedsel. Vriendelijke vent die duidelijk om zijn klanten geeft. Alles wordt ingepakt en bij Vriendin Dope thuis openen wij vol verwachting ons Ikea pakket.
Na wat ehbo ziet het geheel er eetbaar uit en ik begin. Het vlees is wat ik al vermoedde; dik, apart gekruid, heer-lijk. Deze man was terecht trots op zijn product. Het groenvoer is gewone ijsbergsla, maar door de tijd in de oven is het nogal verlept en zompig. De knoflooksaus is… prima. Niet al te potent, maar ook niet erg standaard.
Het geheel; een mita, verlept ongeïnspireerd groenvoer, ok saus, en vlees waar je u tegen zegt. Als de man evenveel aandacht zou besteden aan zijn brood en groenvoer als aan zijn zaak en zijn vlees zou dit een regelrechte topper zijn.
En nu ga ik mij weer concentreren op de maandag.
