Kebabreporters zijn vleesliefhebbers, dat moge duidelijk zijn. Maar wat voor een vlees? Is er een duidelijk onderscheid te ontdekken in de kebab-eter voorkeur? Worden bepaalde soorten vlees boven de andere verheven als zijnde übervleesch?
Even voor de duidelijkheid; ik heb het hier niet over kwaliteitsvlees van de slager versus diepvriesburgers van de Aldi (best te nassen op een barbecue als het echte vlees op is en je genoeg bier op hebt, overigens). Ik heb het ook niet over lammetjes uit een kratje waar normaliter een kip in bewaard dient te worden, maar met wat frotten past het wel en het gaat toch maar om een enkele lange bootreis waarbij het beestje na aankomst pas losgelaten hoeft te worden, fuck zonlicht, dat heeft het straks op de gril niet nodig, dus nu het nog leeft ook niet, versus vlees van eenhoorntjes die vrolijk fladderend in een Teletubbie-achtige weide hun ding mogen doen totdat ze, danwel niet halal, geslacht worden (voor hen die dat tweede kunnen regelen, ik toon interesse trouwens. Vast lekker).
Nee, kebabreporters getrouw ga ik het dan ook alleen over kebab hebben. Dan hebben we natuurlijk eerst de discussie die al eerder vaak is opgelaaid; welk dier willen wij nou eigenlijk gedood en verwarmd hebben? Lam heeft bij mij de voorkeur, kalf een goede tweede en om Jan bij te staan word ik niet heel erg vrolijk van kip (hoewel dit in andere gerechten wel weer erg smakelijk kan zijn maar we hebben het hier immers over, jawel; kebab). Maar ook deze discussie is eigenlijk niet wat ik hier weer probeer op te rakelen; het blijft mij gaan, puur en simpel, om de kebab. Van alle verhalen die op deze site staan vermoed ik dat 90% gaat over het broodje döner. Her en der komt er opeens een kapsalon langs, of als je graag de verhalen van Bob Kepap leest; vis en/of varkenskebab of hele borden kebabschotel.
Een naar mijn idee ondergewaardeerd klaarblijkelijk imbeciel broertje is de Adana kebab, wat naar blijkt ook in een broodje gestopt kan worden na het op een grote binnenbecue vakkundig is gegrild, in combinatie met konijnenvoer (the usual suspects, niets bijzonders), knoflooksaus, sambal en als extraatje; pittige chilipoeder.
Op deze manier serveren ze het ‘broodje kebab’ namelijk bij het Turkse restaurant Başkoşe op de Marnixlaan in Utrecht. Döner was op hun vrolijke menukaart niet terug te vinden. Mopperend dat het de ‘verkeerde kebab’ was die we bestelden vertelde ik Jan dat er achter hem ook een lullig A4tje hing waar op stond dat ze ook döner verkochten, waarna hij er nog meer de ziekte in had. Hier was duidelijk één reporter met een duidelijke voorkeur wat betreft het eerder genoemde übervleesch. Onder het motto: ‘een broodje kebab is een broodje kebab en ik ben kebabreporter’ opperde ik dat ik er toch een verslag over ging schrijven. Waar we het over eens waren was dat hun gigantische indoor houtskoolgrill fantastisch was, het spit leeg, en het broodje dood dier smakelijk, dus we namen ons ‘verkeerde’ broodje kebab wat €4,50 kostte tot ons met smaak. Voor de verandering eens wèl lam. De sambal was flauw maar het poeder gaf het toch extra pit. De knoflooksaus was vreemd genoeg zoet maar niet onsmakelijk.
Na de zaak op te zoeken op ze interwebz blijkt het broodje döner weer afwezig van hun menukaart, dus ik vraag me af of ze het echt hebben.
Ondanks het onaangename starende gezin naast ons wat in het Turks over ons leek te babbelen en de mompelende verkoper (die heel schattig vertelde over hun dagmenu’s, maar dat dermate mompelend deed dat ik wat vriendelijk knikte terwijl ik er geen zak van verstond), kan ik Başkoşe wel aanraden, maar voornamelijk als zijnde een restaurant waar je met veel man moet komen en dan zo veel mogelijk moet bestellen wat van hun fantastische indoorgrill komt. Desondanks geef ik het broodje kebab 3 schapen, wat er meer zouden kunnen worden als ze de prijs iets omlaag krikken. Props voor het poeder!
