Het kan zo makkelijk zijn. Je bent een wat oudere Turkse meneer, je runt een kebabzaak, je hebt broodjes, je hebt een spit met een rol vlees, je hebt wat bakjes sla alsmede wat bakjes saus. Je gooit het broodje even in de oven, je haalt wat vlees ergens vandaan omdat de rol aan het spit nog niet gaar is en legt het vlees dus maar even op de grillplaat. Dit alles vooral niet te overhaast. Je wordt ook al een dagje ouder natuurlijk. Je vraagt de klant welke sauzen hij wil, en op het antwoord “alles” stop je alvast een bakje knoflooksaus, een bakje sambal en een bakje rode uiensaus in het tasje. Ah, mooi, je vind dat het broodje lang genoeg in de oven heeft gelegen. Je gooit er wat vlees in, dan wat sla en vervolgens de rest van het vlees. En als het niet helemaal past dan prop je toch wat? Hup, zilverfolie er omheen en even vriendelijk 4 euro aan de klant vragen.
Het kan zo vervelend zijn. Je bent een hongerige reporter die even snel een broodje wil om in zijn auto op te eten. Meenemen betekent niet automatisch dat je ergens thuis of op het werk gaat eten. Dan zijn die bakjes met saus niet echt handig zonder lepel. Zeker niet als er geen servetjes mee gegeven zijn. Niets mis met grote hoeveelheden vlees, maar het eet zo lastig als de helft uit het broodje valt. Een broodje dat best wat langer in de oven had mogen liggen. En waarom betaal je voor een broodje kebab, zonder de toevoeging kip, maar eet je vervolgens taaie stukjes kip, die niet echt vers meer te noemen zijn? Terwijl dit dus wel het hele bedrag van 25 cent goedkoper zou moeten zijn. Genoeg verbeterpuntjes voor deze tent. En voor mij was het een mooie oefening voor de, jawel, alweer 4e Kebabtour die er aan komt, en waar we ongetwijfeld ook nog wel wat net niet broodjes te eten gaan krijgen.
