Uit een doos wordt een plastic zak gehaald, met daarin durum. Heb ik weer, ik wilde een BROODJE.
“Manuel” kijkt echter nog zo triest, dat ik me in hou. Daarna verdwijnt hij andermaal in de koelvitrine en duikt een gehaktbal op. De bal gaat op de bakplaat en dan gebeurt het. Ineens blijkt Manuel gewapend met een koks-plamuurmes en bussen kruiden. Hij gaat volledig los op de nietsvermoedende bal gemalen lam.
“Ook alleen knoflook zeker”
“Nee, ik wil ook chilisaus en kaas”.
“Si” roept Manuel, en je ziet het geluk door zijn lijf trekken. Hij viert het met een extra workout op de massa bakkend gehakt.
Zorgvuldig wordt de durum ingesmeerd met knoflook en minutieus belegd met sla, kool, wortel, mais, olijf, paprika en tomaat.
Daarover gaat een laagje chilisaus, dan volgt het vlees en de uitjes, die even zijn meegebakken. Het geheel wordt afgemaakt met een derde saus. Daarna wordt de durum gevouwen met een liefde die volgens MaCA alleen te vergelijken valt met het vouwen van een luier voor een eerstgeboren kind.
Kijk, dat beeld wilde ik nu net niet, maar het omschrijft wel de zorgvuldigheid. Op het laatste moment wordt een plak kaas mee gerold. Daarna gaat het geheel nog even op de bakplaat, zodat de kaas iets smelt en daarmee de durum in absolute perfectie bij elkaar houdt.
Een minpunt? Het is absoluut godsonmogelijk een foto te maken die op enige manier recht doet aan het eindresultaat. En verder: Hulde, hulde, hulde & respect. Wat een perfecte verdeling, wat een waanzinnig goed bereid vlees. Wat een heerlijke sauzen. Niet heel scherp, maar perfect in balans met de rijke variatie van smaken in die ene durum. Mijn humeur is de rest van de dag net zo zonnig als mijn omgeving. Het was er 37 graden :-). Manuel is King! Vier schapen voor Granada.
