Vandaag was het zover. Tussen 12.00 en 13.00 zou ik gebeld worden door een afgevaardigde van het inmiddels welbekende Kebabreporters team. Ik stond net lekker m’n kont af te spoelen onder de douche toen ik m’n telefoon hoorde gaan en ik had al zo’n donkerbruin vermoeden wat betreft de identiteit van degene aan de andere kant van de lijn. Omdat ik vandaag de aangewezen persoon zou zijn die de kebabreporters door de Haagse jungle van beton, camera’s en overenthousiaste wouten moest leiden, wilde ik mijn gemiste oproep niet al te lang onbeantwoord laten en huppelde halfnaakt door het huis om eventjes terug te bellen. “ Heeeeeeej ouwe, hoe issie nou?” sprak ik eloquent. Het was Bas de Zeikerd himself waarmee ik sprak. Na een kort gesprekje en overleg werd duidelijk dat het team van vleesetende nomaden over een klein uurtje op Hollands Spoor zou arriveren, een afspraak was tot stand gekomen, “….zie je daar goos.”
Wellicht ietwat te optimistisch verliet ik het thuisfront met m’n bodywarmertje aan, maar ja schijt…het zonnetje schijnt ja toch. Gewapend met een goed humeur en een gezonde trek in bier en gegrillde kadavers stapte ik de tram in richting Hollands Spoor. Na een lichte vertraging op gelopen te hebben op het Weteringplein, omdat een of andere crackhead dacht dat het tramspoor bedoeld was om in te fietsen, bereikte ik mijn bestemming. Quasi nonchalant doch zeer deftig liep ik richting belhuis Achmed waar ik de delegatie uit Noord Holland en omstreken aantrof. Vijf nobele heren, twee edele vrouwen en ik als gids liepen de stationsweg op, richting centrum. Het was aan.
Na de nodige kilometers, broodjes, biertjes en tegenslagen waren we aangekomen bij een kebabtent waarover binnen mijn sociale kringen het een en ander te doen was geweest in de vorm van discussies en de daarbij horende pogingen tot overtuiging. Ik heb het over bakkerij Maxima in de Prins Hendrikstraat. Een aantal mensen die ik ken claimden namelijk dat ze hier betere broodjes kebab hadden dan bij mijn vaste kebabtent, Aksu Firini in de weimarstraat. Dit kon ik natuurlijk niet zomaar laten voor wat het is en besloot Maxima eens zeer nauwgezet te onderwerpen aan het oordeel van mijn ogen en smaakpapillen. Klein, maar belangrijk detail: Kipdöner vreet ik niet, dus beide recensies behelzen lam/kalfsdöner.
Zoals ik al zei stond deze editie van de kronieken der Kebabreporters voornamelijk in het teken van het vergelijken van bakkerij Maxima met Aksu Firini, dus ik zal het resterende gedeelte van mijn verslag min of meer gieten in de vorm van een quasi-experiment. Niets is zo subjectief als persoonlijke smaak, maar er zijn wel een aantal redelijk objectieve criteria die gehanteerd kunnen worden bij het beoordelen van een broodje kebab. Dit zijn onder andere de kwaliteit van het vlees, de hoeveelheid vlees, de kwaliteit van de toevoegingen (sla, tomaten, uitjes e.d.), het aanbod en de kwaliteit van de sauzen, de kwaliteit van het brood zelf en natuurlijk de verdeling en verhouding van vlees, sla e.d. en saus. Enfin, to the point, het broodje kebab bij Maxima kwam, wat mij betreft, tot de volgende beoordeling: De kwaliteit van het vlees was niet super, maar ook niet slecht…de smaak was goed, alleen het waren een beetje lullige vlokjes vlees die mij, als carnivoor, niet echt konden bekoren. En met de hoeveelheid vlees op het broodje stil je de honger in Afrika ook niet echt. Op de sla heb ik eerlijk gezegd niet echt gelet, maar die zat er wel op. De sauzen waren een beetje lafjes, vooral de knoflooksaus was gay, die proefde je nauwelijks. De sambal was ook niet veel beter. Het broodje zelf was okee, een vers maisbroodje. Het grootste pluspunt aan het broodje bij Maxima was de verdeling, die was pico bello in orde. Van de eerste tot de laatste hap kreeg ik brood, vlees, groente en saus mijn gulzige mondje binnen en dat was erg fijn. Al met al niet echt veel pluspunten zou je denken als dit zo leest, maar tijdens het eten stond ik toch echt te genieten van dit broodje, het geheel klopte gewoon zeg maar. Prijs van dit broodje was volgens mij 3,50…dat is ongeveer de gemiddelde prijs voor een broodje kebab in Den Haag. Sterke punt van dit broodje is de verdeling van de ingrediënten, zwakke punt is de knoflooksaus. Eindoordeel bakkerij Maxima: ruim voldoende.
Next up: Aksu Firini. Vanwege het feit dat ik hier mijn kebab al minstens 10 jaar haal en net een broodje van Maxima in m’n mik had zitten, kocht ik vandaag geen broodje bij Aksu. Dezelfde gasten stonden er nog en de broodjes zagen er nog steeds uit zoals ze dat al minstens 10 jaar doen, dus we gaan er gemakshalve even vanuit dat de kebabreporters dezelfde broodjes hebben gegeten als ik altijd doe. Het vlees is er goed…volle smaak…lang en dun gesneden stukken döner en de hoeveelheid is genoeg om sluiten van het broodje onmogelijk te maken. De sla is er altijd fris, lekker veel rode ui en brokjes tomaat. De sauzen zijn goed, vooral de knoflooksaus is zoals knoflooksaus hoort te zijn: Romig, maar niet dik en smakelijk aanwezig, maar niet overheersend. De sambal is er ook prima. De broodjes zelf worden eventjes geroosterd in de oven en zijn knapperig van buiten en zacht van binnen, goed dus. De verdeling van het vlees, saus en groenten is, wat mij betreft, het enige minpunt aan de broodjes kebab bij Aksu Firini. Alhoewel het erg fijn is dat je vaak zo veel vlees krijgt dat je broodje bijna uit z’n voegen barst, kan de verdeling beter. Veel saus op bepaalde plekken en bijna geen saus op andere plekken, zelfde geldt voor de groenten. Kosten van dit broodje zijn 3,25. Sterke punt van dit broodje is het vlees qua smaak en hoeveelheid, zwakke punt is de verdeling. Eindoordeel Aksu Firini: zeer goed.
Eindconclusie: Zowel bakkerij Maxima als Aksu Firini verkopen zeer smakelijke broodjes, maar als ik mag kiezen zou ik altijd voor Aksu Firini gaan.
